I made this exactly as written. It was delicious and complex with a fantastic mix of textures but I’d never mistake it for mac and cheddar. I will definitely make it again, maybe even for my omnivore friends, but I may call it “Mac and Yeast Squared ” because of the nutritional yeast and the beer.

Definitely the best I’ve ever made! I agree with Mari, though — next time I’ll be making either more sauce or fewer noodles (thinking maybe 1.5 – 1.75 Cups of macaroni), and using fewer breadcrumbs in the crust, as the overall baked result was a bit dry and thick. I also think I’ll add a bit more beer to keep the cheese sauce a little looser and gooier. But seriously, an AMAZING recipe. I will absolutely be making this again. My omni parents who are often very suspicious of vegan foods (especially vegan “creams” and “cheeses”) gobbled this down. Thanks!

I have to say this was the best I’ve tried so far. But there was something off/missing… perhpaps too much panko (I think it dried it out), a little less mushroom (I love mushrooms – maybe it was something else in that little mixture?) and DEF more of the sauce – I like my stuff creamy and after baking the noodels had soaked up everything. I will definitely be tweaking this and perhaps will combine parts of recipes I like to make my own version – this was a great addition to my repetoire! (I’m on a mission to find the best vegan mac n cheese, based on my personal preferences!) Thanks for your time and interest! I wish you had a FB page with recipes posted… just a thought ;) Namaste!
