It seemed a lot, and was far more that I usually use for seitan, or for curry. I went with trust, and ended up with a loaf that is not at all shy on flavor. Real different than your last seitan with its spice level. Don’t get me wrong – I love coriander and cumin, but this is a little cough-provoking. Did I do something wrong?
