This is Jeff from the Half and Half. I have toyed with this idea myself for a while now. I have been using sliced firm tofu (about 1/8 inch thick) marinated in vegan chicken broth. After 24 hours, I would fry it, both sides, in onions to give it that greasy spoon diner taste. I too used tempeh but with pure maple syrup and smoked paprika. Next add tomatoes or avocados. Using sandwich bread with veganaise on the outside, I grilled the whole thing like a grilled cheese sandwich.
