What's the buzz?

We have now switched our cheddar for our breakfast buddies to a four year old Wisconsin variety from La Valle on old highway G - amazing depth with a texture of crumbly butter. We have also been doing a ton of beef sandwiches lately which is somewhat new to us. Years ago we did a brisket with cranberry chutney and a roasted beef with fresh Horseradish but the red meat has been vacant from the cooler for a while.

Many of you have recently had, raved about and/or facebooked the Choi Burger - bulgogi, kimichi and lettuce on baquette. It will be making an appearance throughout the fall and perhaps into next year.

Today I added some tri-tip from S&P meats to the pot and made a pot roast with tomato jus. It will be hand sliced, straight from the pot, stuffed into a ciabatta roll with spinach and extra jus.

Also, Dan Wilson came back and showed new employee Kristen a thing or two about mayonaise.
