I am really obsessed with roasted winter vegetables right now. I'd been meaning to figure out how to make them for way too long and now that I know how easy it is I want to do it all the time. Here's what I did:

beet
yam
parsnip
turnip
carrot

chopped in big chunks.
tossed with tablespoon of olive oil, salt and pepper.
30 minutes at 450 F.

I have been thinking about this every day.

Also, I got a cat! She's real cute. But she still doesn't have a name. Nor does she grow underground.
